Der Sommer war hei\u00df, und darum\u00a0brachten\u00a0Bianca und Karl\u00a0in Montemassi in der Toskana\u00a0schon Ende Oktober ihre Oliven in die Presse. Aus 85 Kilogramm wurden 11 Liter feines Oliven\u00f6l. Wir feierten, denn ich war zuf\u00e4llig Zaungast.<!--more-->\u00a0<\/span><\/p>\n<p><span style=\"font-family: Georgia, serif;\">Auf die B\u00e4ume muss man selber steigen. Unten breitet man ein Netz aus, damit nichts verlorengeht, und dann streift man mit der Hand die Zweige ab. Zwei Tage waren Karl und Bianca t\u00e4tig, bis die f\u00fcnf B\u00e4ume abgeerntet waren. Die f\u00fcnf B\u00e4ume brachten f\u00fcnf Kisten voll mit <span style=\"font-family: Georgia, serif;\">\u00bb<\/span>biologischen<span style=\"font-family: Georgia, serif;\">\u00ab<\/span> Oliven, die ohne Pestizide heranwuchsen. <\/span><\/p>\n<p><span style=\"font-family: Georgia, serif;\">Im <span style=\"font-family: Georgia, serif;\">\u00bb<\/span>Frantoio<span style=\"font-family: Georgia, serif;\">\u00ab<\/span> (die Presse) werden die Oliven durch eine Maschine ausgepresst und zu \u00d6l. Es ist Tradition, mit dem neuen, frisch gepressten \u00d6l <span style=\"font-family: Georgia, serif;\">\u00bb<\/span>Bruschette<span style=\"font-family: Georgia, serif;\">\u00ab<\/span> (ger\u00f6stete Brotscheiben) zu bestreichen, nachdem man sie kr\u00e4ftig mit Knoblauch eingerieben hat. Mehr muss man nicht wissen. <span style=\"font-family: Georgia, serif;\">\u00bb<\/span>Extra vergine<span style=\"font-family: Georgia, serif;\">\u00ab<\/span> ist \u00d6l aus einer besonderen Olivenauswahl. <\/span><\/p>\n<p><span style=\"font-family: Georgia, serif;\">Hier unten sehen wir anhand von Bildern den Weg von der Ernte hinunter zum fertigen Produkt.
